Apple Crumble Muffins
A vegan + gluten-free muffin that tastes like a real apple pie?! Simple + full of love, our sweetest dreams have come true!! What more could you ask for?!
Ingredients:
- 1 + 1/2 cups gluten-free self-raising flour
- 1 tsp baking soda
- pinch of salt
- 1/4 tsp cinnamon
- 1/2 cup vegan butter, melted
- 1/2 cup brown sugar (+ extra to top)
- 1/3 cup apple sauce
- 1 tsp vanilla extract
- 1/2 cup soy milk
- 1 large or 2 small apples, cored and diced into 1cm pieces
- 1/3 cup raw walnuts, roughly chopped (+ extra to top)
Method:
1. Grease a 6 x muffin tin with olive oil spray. Preheat oven to 180°C fan-forced (355°F).
2. Sieve flour and baking soda into a large mixing bowl and add sugar, salt and cinnamon. Use a whisk to combine, create a well in the centre of the mixture.
3. Add apple sauce, melted butter, vanilla and milk. Combine, before adding diced apples and walnuts and mixing well.
4. Evenly spoon batter into the greased muffin tin. Top with extra chopped walnuts and brown sugar if desired. Place in the oven and bake for 25-30 minutes or until a knife comes out clean.
5. Remove muffins from oven, leaving in the muffin tin for 10-15 minutes before placing on a wire cooling rack.
