Blackberry Lemon Oats
I am loving these blackberry and lemon oats lately, as a great way to have a wholesome and delicious breakfast meal prepped and ready to go in the fridge. If you’re not a fan of blackberries, you can swap them out for your favourite berry instead.
Ingredients:
Blackberry chia jam:
- 125g blackberries
- 1 tsp vanilla extract
- 2 tsp maple syrup
- 2 tbsp chia seeds
Lemon oats:
- 1 + 1/2 cups quick oats
- zest of 1/2 a large lemon
- 1/2 cup soy vanilla yoghurt
- 2 cups soy milk
- juice of 1 lemon
- 1 tbsp maple syrup
- 1 tsp vanilla extract
To serve:
- Soy vanilla yoghurt
- Fresh blackberries
Method:
1. Place a small saucepan over medium-high heat and add the blackberries, as well as a splash of water. Heat the blackberries and squash them down with a spoon until they are nice and soft.
2. Add 1 tsp vanilla and 2 tsp of maple syrup, followed by the chia seeds, and mix well for 1-2 minutes. Turn the heat off and leave the blackberry chia jam to thicken.
3. Add all oats ingredients to a large mixing bowl, and whisk together well. Spoon 3/4 of the mixture into 2-3 seperate jars or containers.
4. Spoon the blackberry chia jam into the jars or containers, and then top with the remaining oats mixture. Add fresh blackberries and yoghurt on top, if desired.
5. Store in the fridge for up to 5 days and enjoy!
