Five Ingredient Main Meals
Hello! I hope you’ve all been keeping so well. In a recent YouTube video, I shared 5 of my favourite 5 ingredient vegan meals. I love making these types of videos and creating these recipes as it really challenges me to just use up what I have leftover in the pantry. I’m a big advocate for this and love getting creative in the kitchen the day before my big grocery shop.
Below, you’ll find 5 easy recipes (all with 5 ingredients only, of course). I hope you enjoy :)
Simple Kale Gnocchi
You will need:
- 2 tbsp olive oil
- 3 stems of kale, washed and chopped
- 3 tbsp nutritional yeast
- 250g store-bought gnocchi
- 1/4 tsp salt
Method:
1. Heat a large frying pan over medium-high heat and pour the oil in. Once the oil is hot, add the kale and half of the nutritional yeast to the pan and fry for 10 minutes.
2. Whilst the kale is frying, cook the gnocchi as per the packet instructions.
3. Once the gnocchi is cooked, strain before adding to the pan with the kale. Add the remaining nutritional yeast and salt to the pan, continuing to fry until the gnocchi is golden. Serve hot!
Black Bean & Vegan Cheese Quesadillas
You will need:
- 4 mini tortillas (corn or wheat)
- 1 cup black beans
- 1/4 cup tomato paste
- 5-6 slices of vegan cheese
- 1 tbsp olive oil
Method:
1. Drain and rinse a can of black beans, before measuring out 1 cup and placing them into a bowl. Add the tomato paste and mash together well.
2. Slice your vegan cheese, before placing 2 of your tortillas onto a flat surface and topping with the black bean mixture, followed by vegan cheese.
3. Finally, top with the extra 2 tortillas and set to the side.
4. Heat a large frying pan over medium-high heat. Pour oil into the pan and once it’s hot place the filled tortillas into the pan, too.
5. Fry the quesadillas until golden on both sides. Cut into quarters and serve warm.
Simple Chocolate Baked Oats
You will need:
- 1 ripe banana
- 1 cup oats
- 1 cup plant-based milk
- 1 heaped tbsp cacao powder
- 1/2 tsp baking powder
Method:
1. Preheat the oven to 180°C fan forced.
2. In a high-powered blender, combine all ingredients until smooth. Pour batter into an oven-safe bowl and place in the oven.
3. Bake for 20-25 minutes before removing from the oven and enjoying warm.
Lentil Sausage Rolls
You will need:
- 1 sheet puff pastry
- 400g can lentils, drained and rinsed
- 1/4 cup tomato paste
- 2 tbsp italian herbs
- 1/2 tsp salt
Method:
1. Preheat the oven to 190°C fan forced and defrost a puff pastry sheet.
2. Mix lentils, salt, tomato paste and herbs in a bowl.
3. Roll the lentil mixture in the puff pastry, forming one long ‘sausage roll’. Cut into desired piece sizes, before placing onto a baking tray and baking in the oven for 20-25 minutes (or until golden).
4. Enjoy warm!
Warm Cous Cous Salad:
You will need:
- 400g can of chickpeas, drained and rinsed
- 50g spinach leaves
- 1/2 cup sundried tomatoes and the oil they came in
- 1/2 cup cous cous
- 1 + 1/2 cups veggie stock
Method:
1. In a small saucepan over medium heat, boil the cous cous and veggie stock together until the liquid has all been absorbed.
2. In a frying pan over medium heat, fry the sundried tomatoes and chickpeas together for 10 minutes before adding the spinach to wilt for 2 minutes.
3. Serve the spinach, sundried tomatoes and chickpea mixture over the cous cous. Enjoy warm!
