Lemon Pepper Cauliflower

This lemon pepper cauliflower is so delicious & crispy - I’m obsessed! Enjoy on it’s own or as the hero in a salad.

Ingredients:
- 1 head cauliflower

For the batter:
- 1/2 cup soy milk
- 1 tsp lemon pepper seasoning
- 2 heaped tbsp plain flour

For the crumb:
- 1 cup panko breadcrumbs
- 2 tsp lemon pepper seasoning
- zest of 1/2 a lemon

Liquid coating:
- 1 tbsp maple syrup
- juice of 1 lemon
- 2 tbsp olive oil

To serve:
- vegan sour cream
- sweet chilli sauce

Method:
1. preheat the oven to 180°c fan-forced, line a large baking tray with baking paper.
2. cut a head of cauliflower into florets, set to the side.
3. in a small bowl, combine all 'batter' ingredients. in another bowl, combine all 'crumb' ingredients.
4. one-by-one, place the cauliflower in the batter, then transfer to the crumb and coat evenly. place on the baking tray. repeat until all cauliflower has been used.
5. in a small bowl, mix all liquid coating ingredients. drizzle evenly over the cauliflower pieces, before placing the cauliflower in the oven to bake for 30 minutes or until golden and crispy.
6. serve hot with vegan sour cream and sweet chilli sauce :)
