Peanut butter stir fry
This peanut butter stir fry is a classic that I’ve been making on repeat for years now. The perfect balance of hearty and wholesome, it’s the perfect meal to add to your weekly rotation.
Serves two
Ingredients:
- 3 spring onions
- 3 cloves of garlic
- 1/2 tbsp olive oil
- 1 carrot
- 1 bunch of broccolini
- 1 yellow capsicum
- 1 small bunch of pak choy
- 10 green beans
- 180g udon noodles
- 1/2 cup crunchy peanut butter
- 1 tsp soy sauce
- 1 tsp maple syrup
- the juice of 1/2 a lemon
- a pinch of salt
- 1/4 cup hot water
Method:
1. Finely chop spring onions and garlic, before placing them into a large frying pan over medium-high heat with the olive oil. stir lightly and cook until golden.
2. Chop carrot and broccolini into small-medium pieces, before adding them to the large frying pan and allowing to cook for 10-15 minutes, stirring occasionally.
3. In a medium-sized bowl, mix peanut butter, soy sauce, maple syrup, lemon juice, salt and hot water until smooth, adding more water if needed. then, chop the capsicum, green beans and pak choy into small-medium pieces and add them to the frying pan, cooking for a further 7-10 minutes.
4. Whilst the vegetables are frying, cook your udon noodles as per packet instructions, before draining and rinsing lightly.
5. Add noodles and peanut sauce to the frying pan, tossing lightly until noodles and vegetables are coating in peanut sauce. remove from the heat.
6. Serve hot, top with sesame seeds or fresh herbs if desired, and enjoy!
