Sundried Tomato Butter Beans
I feel like butter beans have finally been given their moment recently and I absolutely love this super easy & delicious sundried tomato dish.
Ingredients:
- 1 tbsp olive oil
- 1/2 brown onion, diced
- 2 cloves garlic, finely chopped
- 2 tbsp tomato paste
- 2 tsp smoked paprika
- 1/2 cup sundried tomatoes
- 1/4 cup water
- 1/3 cup plant based cream
- 400g tinned butter beans, drained and rinsed
- salt and pepper, to taste
- toasted bread, to serve
Method:
1. Add oil, garlic and brown onion to a frying pan over medium-high heat. Fry for 2-3 mins.
2. Add tomato paste and smoked paprika, continue frying for 1-2 mins before adding sun-dried tomatoes and water. Mix well.
3. Reduce heat to low-medium and add plant based cream, butter beans, salt and pepper. Heat, stirring occasionally, for 10 minutes
4. Remove from the heat and top with additional plant cream, paprika, salt and pepper if desired. Serve with toasted bread.
