Teriyaki mince baos

I’ve impressed many non-vegans now with this super easy dinner recipe & am so excited to be sharing it with you!

Serves 2

Ingredients:
- 1/4 brown onion
- 1/2 tbsp rice bran/another neutral-flavoured oil
- 1/2 cup walnuts
- 200g brown lentils (from the can)
- 3 tbsp store-bought teriyaki sauce

To serve:

3-4 steamed bao buns
- carrot
- cucumber
- spring onion
- vegan mayonnaise
- toasted sesame seeds


Method:
1. Finely dice brown onion, then place a frying pan over medium heat on the stove
2. Add oil, and once hot add the diced onion. Fry for 2-3 minutes
3. Add the walnuts to a food processor and blitz into a fine crumb, then add to the frying pan and toss, frying for a further 1-2 minutes
4. Add the teriyaki sauce, reduce the heat to low. Mix the teriyaki sauce in well, adding a splash of water if the mixture is too thick
5. Drain the lentils and rinse well, before adding to the frying pan. Mix the lentils in well, continuing to cook for 1-2 minutes, before removing from the heat
6. Serve the mince on freshly steamed bao buns with carrot, cucumber, spring onion, mayonnaise and sesame seeds as desired
