Sundried tomato pasta

There’s just nothing like a tomato pasta - it’s simple, it’s quick and it tastes soooo good! Over the years, I’ve been working on perfect my favourite tomato pasta sauce recipe and realised the secret ingredient to making it extra delicious - sun-dried tomatoes. I love sun-dried tomatoes and think their bold flavour compliments this pasta sauce so well.

Serves 3-4


Ingredients:
- 1 tbsp olive oil
- 1/4 tsp chilli flakes
- 1 large brown onion, diced
- 1/2 tbsp coconut sugar
- 130g rich tomato paste
- 600g tinned crushed tomatoes
- 200g sun-dried tomatoes, chopped roughly
- 3 garlic cloves, crushed
- 1 tsp salt (add more to taste)
- 1/4 tsp black pepper

To serve:
- 500g pasta of choice, cooked al dente

Method:
1. Place the Cosmo Pan over medium heat on the stove. Add oil and onion, fry for 3-4 minutes.
2. Add coconut sugar and mix well with the onions and oil. Leave to cook on medium heat for a further 3-4 minutes.
3. Add tomato paste, mix and continue frying for a further 3-4 minutes.
4. Add tinned tomatoes, sun-dried tomatoes, garlic, salt and pepper. Mix well. Leave to cook for 10-15 minutes, stirring every few minutes. In the meantime, cook your pasta as per packet instructions.
5. Drain the pasta and add to the pasta sauce, mix well. Top with parsley and vegan cheese if desired. Enjoy hot!
