Vegan choc-chip cookies

These vegan choc-chip cookies are my absolute FAVOURITE and so easy to make! A delicious, warm & fun treat - I hope you love them as much as I do!

Makes 12 cookies
Ingredients:
- 1 tbsp flax meal
- 1/4 cup plant-based milk
- 1 1/2 cups brown sugar
- 3/4 cup vegan butter
- 2 tsp vanilla essenc
- 2 cups self raising flour
- pinch of salt (+ more to top)
- 1/2 cup vegan choc-chips (+ more to top)

Method:
1. Preheat the oven to 190°C fan-forced, line 2 baking trays with baking paper.
2. In a small cup, mix flax meal and milk together. Set aside for 1 minute.
3. Add sugar, butter, vanilla and flax mixture to a large mixing bowl and combine well.
4. Sieve in the self-raising flour, add salt and mix to form a cookie dough (use your hands if needed).
5. Add in the choc-chips, combining well.
6. Roll the dough into 5cm balls, placing them on the baking sheet and pressing down lightly. Ensure to leave at least 10cm between each ball. Top each cookie dough piece with extra choc-chips and salt as desired.
7. Place into the oven and bake for 15-17 minutes. Once baked, remove from the oven and leave to cool on the baking tray for at least 30 mins. Hope you enjoy!
