BBQ Tempeh Skewers

I love make BBQ tempeh skewers for entertaining with friends. Don’t like tempeh? No worries! Simply swap with tofu.

Ingredients:
- 300g tempeh, cut into fingers (size dependent on your skewer size)
- 2 tbsp olive oil
- 3 tbsp bbq sauce
- 2 tbsp soy sauce
- 1 tsp liquid smoke
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- coriander to serve, if desired

Sauce ingredients:
- 3 tbsp natural coconut yoghurt
- 1/2 tsp dijon mustard
- salt and pepper, to taste
- 1/2 tsp smoked paprika

Method:
1. mix oil, bbq sauce, soy sauce, liquid smoke, onion powder, garlic powder and smoked paprika in a bowl.
2. dip and coat the tempeh in the sauce mixture, before placing into a large frying pan over medium-high heat. fry up for ~3 minutes on each side, or until crispy and golden.
3. press skewers through each piece of tempeh, before drizzling with excess sauce and sprinkling with coriander if desired.
4. mix coconut yoghurt, dijon mustard, salt, pepper and smoked paprika in a bowl until smooth. serve with tempeh skewers.
