Berry breakfast crumble

Fun fact: my boyfriend is not a sweet breakfast kinda guy - but he absolutely loved this berry breakfast crumble. It’s super simple, subtly sweet, and absolutely delicious. I hope you enjoy!

Serves 2


Ingredients:
Berry layer:
- 2 cups frozen mixed berries
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1 tbsp chia seeds

Crumble layer:
- 1 cup almond meal
- 1 cup oats
- 1/3 cup vegan butter
- 1 tbsp maple syrup
- 1 cup macadamias
- pinch of salt
- coconut yoghurt to serve, if desired

Method:
1. Preheat the oven to 180°C fan-forced and prepare 2 oven-safe dishes of the same size (approx 10cm x 20cm will be perfect)

2. Place a small saucepan over medium heat on the stove. Add frozen berries, vanilla, maple syrup and chia seeds to the saucepan and heat for 10 minutes, or until berries have reduced well. Continue stirring occasionally throughout the 10 minutes.

3. In a mixing bowl, combine almond meal, oats, vegan butter, maple syrup, macadamias and salt. Use your hands if needed, and mix until a crumble forms.

4. Evenly disperse the berry mixture between the 2 oven-safe dishes. Top with the crumble mixture, again evenly dispersed, and place in the oven to bake for 15 minutes.

5. After 15 minutes in the oven, or until lightly golden on top, remove the crumbles from the oven. Serve warm, with coconut yoghurt on top if desired.
