Lentil and walnut mince

I started making this lentil and walnut mince a few months ago and I’ve been obsessed ever since! It comes together so quickly, is so easy to make and is SO tasty

Serves 3-5


Ingredients:
- 1 tbsp olive oil
- 150g raw walnuts
- 1/2 brown onion
- 30g taco seasoning
- 1/8 cup soy sauce
- 1/3 cup water
- 2 tbsp tomato paste
- 200g tinned lentils, drained and rinsed


To serve:
- Toasted tortillas or taco shells
- Avocado, diced or smashed
- Cos lettuce, finely chopped
- Diced red onion (or pickled red onions!)
- Natural coconut yoghurt
- Fresh coriander
- Fresh lime



Method:
1. Finely diced brown onion, then place a large frying pan over the stove on medium heat
2. Add oil to frying pan, once hot add brown onion and fry for 2-3 minutes, stirring occasionally
3. Whilst the onion is frying, blitz the walnuts into a fine crumb. Then, add to the frying pan with the onion and stir to combine
4. Add taco seasoning and mix with the walnuts and onion well. Then, add the soy sauce, water, tomato paste and lentils and stir to combine
5. Mix the mince together over the heat for 2-3 minutes, then remove from the heat
6. Serve warm on toasted tortillas with whichever fresh ingredients you desire. Enjoy!!
