Broccoli & Red Capsicum Paella ft. Cosmic Cookware Australia

This super simple, delicious and easy paella recipe has become a favourite for me recently. It’s packed full of flavour, and only requires one pan for an easy clean-up!

My cookware of choice for this recipe is the Cosmo Pan by Cosmic Cookware. Okay, let’s get into the recipe!

Ingredients:
- 1 + 1/2 tbsp olive oil
- 1/2 red onion, peeled and finely diced
- 1 red capsicum, de-seeded and finely chopped
- 1 head broccoli, cut into florets
- 2 roma tomatoes, cut into chunks
- 2 tsp smoked paprika
- 2 tsp garlic powder
- 1/2 tbsp vegan beef stock powder
- 1 tbsp veggie stock powder
- 3 cups water
- 2 cups white rice, rinsed until water runs clear
- Salt and pepper (to taste)
- Lemon juice + wedges (as desired)
- Fresh parsley (as desired)

Method:
1. Place the Cosmo Pan over medium heat on the stove. Add oil and onion, fry for 3-4 minutes.
2. Add broccoli and fry for a further 3 minutes, before adding tomatoes and capsicum and frying for 4-5 minutes.
3. Add smoked paprika and garlic powder, fry for a further minute before adding vegan beef stock powder, veggie stock powder, water and rice. Mix together, then place the lid on a bring to the boil.
4. Once the water is boiling, reduce the heat to low and leave to simmer for 15 minutes, stirring occasionally. Once the water is absorbed, add salt, pepper, lemon juice and fresh parsley. Mix and cook for a further 2 minutes, before removing from the heat.
5. Serve with lemon wedges and fresh parsley, enjoy warm!
