Pumpkin & Chickpea Patties

There is something so lovely about making veggie patties from scratch, and I particularly love these pumpkin and chickpea patties for their delicious flavours & how easy they are to make.

Makes 4 large patties

Ingredients:
- 1/2 a butternut pumpkin, skin off, cut into 2cm cubes, boiled until soft and left to cool for 10 minutes
- 1 x 420g can of chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/3 cup chia seeds
- 1/3 cup tahini
- 1 tsp onion powder
- 1 tsp garlic powder
- salt and pepper (to taste)
- 1 cup wholemeal plain flour
- olive oil (to fry)

Method:
1. Add all ingredients except olive oil to a high-powered blender or food processor and blend until smooth
2. Place a large frying pan over low-medium heat and drizzle with oil. Use your hands to mould the mixture into 4 large burger patties. Place patties into the frying pan.
3. Fry the patties for 5-7 minutes on each side, or until golden.
4. Serve hot with your favourite veggies on a burger, or store in the fridge for up to 4 days.
