Crispy Cauliflower
You are going to LOVE this crispy cauliflower with creamy dipping sauce! Perfect to share or enjoy as a snack!
Ingredients:
-1 head cauliflower
-1 tbsp olive oil
Batter:
-1/2 cup soy milk
-3 tbsp plain flour
Crumb:
-1 cup wholemeal breadcrumbs
-2 tbsp plain flour
-3 tbsp nutritional yeast
-1 tsp garlic powder
-1 tsp onion powder
-Salt and pepper, to taste
Sauce:
-1/2 cup soy milk
-1 tsp dijon mustard
-Juice of 1/2 a lemon
-1/4 cup soaked cashews
-2 tsp garlic powder
-1 tsp onion powder
-2 tsp dried dill
-Salt, to taste
Method:
1. Preheat the oven to 180 degrees Celsius and line a large baking tray with baking paper. Place cashews into a bowl and submerge with boiling water for approx. 15 minutes until soft.
2. Cut the head of cauliflower into florets and set to the side.
3. Prepare two bowls. Place all batter ingredients in one, and combine well. Place all crumb ingredients in another, and mix well.
4. One by one, place the cauliflower in the batter, then transfer to the crumb and coat evenly, before placing on the baking tray. Repeat until all cauliflower has been used.
5. Brush the cauliflower pieces with olive oil, before placing in the oven and baking for 30 minutes (or until golden and crispy).
6. Whilst the cauliflower is baking, prepare your sauce. Drain the cashews and place them into a high-powered blender with soy milk and the remainder of the sauce ingredients. Blend for 3-4 minutes, or until smooth.
7. Serve crispy cauliflower with your delicious creamy sauce, and enjoy!
