Simple gnocchi soup

Gnocchi soup is one of those meals that I always thank myself for making. It comes together so quickly, is so hearty and delicious and perfect for a cosy day at home.

Serves 1


Ingredients:
- 1/2 brown onion, diced
- 2 garlic cloves, finely diced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 tbsp tomato paste
- 3/4 cup water
- 1/3 cup passata or tinned tomatoes
- 1/2 tbsp veggie stock powder
- 200g gnocchi
- grated vegan cheese, to serve
- fresh curly parsley, to serve

Method:
1. Add oil, onion and garlic to a small pot over medium-high heat. Fry up for 2-3 minutes.
2. Add dried oregano, dried basil and tomato paste and continue frying for a further 2-3 minutes.
3. Add water, passata and veggie stock powder and mix well. Place the lid on the pot and bring to a boil.
4. Once boiling, add gnocchi. Cook for a further 5 minutes.
5. Remove from the heat and transfer the gnocchi soup into a serving bowl. Top with vegan cheese and parsley, if desired. Enjoy!
