Smashed chickpea toastie
This toastie is one of my new favourites - it’s hearty, it’s delicious and it’s a great way to start the day. The smashed chickpeas are a great source of protein, too!
Makes one toastie
Ingredients:
Caramelised onions:
- 1/2 brown onion, sliced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 tbsp coconut sugar
Smashed chickpeas:
- 200g canned chickpeas, drained and rinsed
- 1/4 cup cashew cream cheese
- 1 tsp smoked paprika
- 1 tsp dried cumin
- salt and pepper, to taste
For the toastie:
- 2 slices sourdough bread
- 2 slices vegan cheese
- vegan butter
Method:
1. Add oil to a frying pan and place over medium-high heat. Once hot, add onions and fry for 2-3 minutes, before adding salt and coconut sugar and continuing to fry until golden and caramelised - approximately 10 minutes.
2. Add chickpeas, cashew cream, paprika, cumin, salt and pepper to a bowl and use a fork to mash together - to your desired consistency. Set to the side.
3. Assemble the sandwich with a slice of bread, vegan butter, caramelised onions, chickpea smash, vegan cheese and another slice of bread with vegan butter.
4. Brush the outside of the toastie with vegan butter or olive oil and place in a frying pan or sandwich press to toast. Toast until golden on both sides, flipping if necessary. And enjoy!
