Tofu Peanut Salad

I am literally obsessed with this salad right now, it’s the perfect balance of sharp flavour, crunch and a nourishing meal!

Ingredients:
- 1 cucumber, diced
- 1/2 cup red cabbage, sliced
- 1/2 cup spinach leaves
- 1 spring onion, sliced
- small handful of coriander, roughly chopped
- 3 tbsp crushed peanuts

Tofu:
- 200g firm tofu, cut into cubes
- 1 tbsp olive oil
- salt and pepper, to taste

Peanut sauce:
- 1/3 cup smooth peanut butter
- 2 tbsp soy sauce
- 1/2 tbsp sesame oil
- 1 tbsp rice wine vinegar
- water

Method:
1. Coat tofu in olive oil, salt and pepper and add to a frying pan. Place over medium-high heat and continue to fry up for 5-10 minutes.
2. Add all sauce ingredients to a bowl, adding water gradually until the sauce is at your desired consistency (it should be pourable).
3. Add cucumber, cabbage, coriander, spring onion, spinach, crushed peanuts, fried tofu and peanut sauce to a bowl and toss together well.
4. Enjoy!
